Step 1: Dirt Tour
Proceeding through the Dirt Tour is probably your first objective. Start with season 1, and make your way through to the end of season 4. Make sure to also play the DC Challenges and do the Battersea compound missions, too. The Tour takes about 10 hours, the DC Challenges will probably clock you around 5, and the Battersea will take about an hour or 2. In total, you get the bulk of the achievements in this mode, and 16-18 hours should net you about 820 .
Step 2: Multiplayer
Your main concern is reaching level 35 in multiplayer to unlock the "Superstar" ranking. This is the longest multiplayer achievement and takes some patience and dedication. Other than that, you are asked to win 10 races, do 25 races, play a bunch of party mode and do a few miscellaneous tasks. After everything is said and done, expect to finish about 150-330 races, spending about anywhere from 9-22+ hours to get 165 in the online category of this game.
Step 3: Clean-up
At this point you are probably very close to getting that 1,000 in Dirt 3. You need to do the Time Trials achievement and may have missed some achievements or you may need to finish a few more DC Challenges on Platinum. Just finish up any achievements you may have missed along the way.
Step 4: DLC
There are four packs of DLC. Two are car packs which require you to use all of the cars once and one of the cars in a specific event, and two are track packs that require you to complete all of the tracks contained in them, an Xbox Live Jam Session on a specific track, and complete one miscellaneous task - for the Monte Carlo Pack it requires driving a certain distance and for the Shibuya Pack it requires that you complete a time trial. None of these are very difficult, and they won't take more than a few hours cumulatively.
